Lemon Muffins

These lemon muffins are the perfect way to say goodbye to summer and make use of your remaining summer produce. They are super easy to whip up, and taste super delicious - especially with the delicious glaze on top! I hope you give them a try!

These muffins bake up super well!

A super fluffy and moist interior!
Ingredients:
1 overripe banana
1/2 cup Greek yogurt
2 tablespoons neutral oil
1/4 cup maple syrup
2 tablespoons lemon zest
1/4 cup lemon juice
1 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Glaze:
1/4 cup powdered sugar
2 tablespoons milk of choice or water
Directions:
Preheat your oven to 375°F, grease a muffin tin with oil, or place liners into each cavity.
In a large bowl, mash the overripe banana. Add in the Greek yogurt, oil, maple syrup, lemon juice, lemon zest, and vanilla extract. Mix with electric beaters or by hand until thoroughly combined.
In a medium bowl, combine the flour, baking powder, baking soda, and salt. Mix until well combined.
Gradually pour the flour mixture into the wet mixture while mixing. Make sure to scrape down the sides of the bowl and ensure there is no unincorporated flour left!
Scoop about 1/3 cup of batter into each muffin cavity.
Place the muffin tin into the oven, and bake for 14-16 minutes.
After 14-16 minutes, take the muffins out of the oven and insert a toothpick into the center of one of them. If the toothpick comes out clean, you know the muffins are done! If not, keep baking for 2-3 minutes.
Let the muffins fully cool on a wire rack.
Make the glaze by combining the powdered sugar and milk/water.
Drizzle the glaze over the muffins until your desired coverage.
