When I was at the farmers market the other day, I found the most beautiful bunch of curly kale that I had ever seen! The stalks felt so firm and crunchy, and the leaves were so robust and crisp. From that moment, I knew that I just had to make my favorite - kale chips! For such little effort (only three ingredients and 30 minutes), these kale chips are super high in return and provide a satisfying crunch to any meal or make the perfect snack.

Ingredients:
12 stalks of kale (I used half of a large bunch.)
1 Tablespoon Olive Oil
1 Teaspoon Salt
Instructions:
Preheat oven to 325° F.
De-stem the kale and chop or tear the leaves into small pieces.
Wash the kale and thoroughly dry it using a salad spinner or kitchen towel until no moisture is left.
Toss the kale with the olive oil and salt in a large bowl, and place the kale on a large baking sheet lined with aluminum foil.
Bake for 20-25 minutes.
After the kale is done baking, let it cool for a few minutes before digging in.
